Super simple recipe if you happen to have a cast-iron skillet. If you don't have one, GO GET ONE! they're dirt cheap, I paid like 15 us dollars for mine and I can do just about anything with it.
3 or 4 potatoes, cut in half lengthwise 1/4 teaspoon rosemary 1/8 teaspoon kosher or season salt 4 tbsp olive oil, canola oil, vegetable oil…. whatever's handy black pepper (fresh ground is amazing!)
do not preheat your oven
toss the potatoes in oil and seasoning
lay them in the skillet, face down
put the whole skillet in the oven (no plastic handles!)
set the oven to 400 and take them out after about 45 minutes
