This is really simple and one of my favorite snack foods. It's really healthy and it blows potato chips out of the water.
Get yourself 1lb of whole, raw almonds. you do not want the salted ones. If you have trouble finding them, look in the baking aisle and you can usually find them in bulk. You want the whole almonds, not slivered.
1 tablespoon ground ginger 1 dried red chili pepper (crushed) or 1 teaspoon red pepper flake (more or less depending on your sensitivity to spicy food) 1 teaspoon kosher or sea salt 2 tablespoons olive oil 1 teaspoon dark sesame seed oil 1 tablespoon low sodium soy sauce 1 tablespoon worcestershire sauce
preheat your oven to 250, line a baking sheet with some parchment paper
take a large mixing bowl and add your ginger powder and salt
heat a skillet or frying pan over medium low heat, add olive oil, dark sesame seed oil, and hot pepper
give the hot pepper a couple seconds to infuse the oil, then add almonds and stir or toss to coat with oil
cook them for 5 minutes, stirring occasionally
add your soy sauce and worcestershire to deglaze, stir heavily for 1 minute
dump the almonds into the mixing bowl and toss them around to coat them evenly with your ginger/salt mixture
dump them out on the baking sheet and put them in the oven for 20 minutes
let them cool and portion them out into plastic baggies, deli cups, whatever you have handy.
